Life can get so hectic these days that it’s hard to find time to cook a good meal and then we end up eating fast food or things that are less healthy for us. If you’re in a pinch for time, I would recommend a good digital pressure cooker/crockpot that can save you time. The cooking time is minimal but there is a little bit of preparation time.
1-2 lbs of pork tenderloins (cut in strips or cubed)
2 stalks celery (cut up
2 quarts chicken stock or chicken broth
1 small yellow onion (chopped)
2 cloves garlic (minced or chopped)
4 potatoes (cubed)
salt & pepper to taste
2 tbsp parsley
1 tbsp onion powder
1/2 cup dried carrots (chopped)
2 tbsp canola oil
Set pressure cooker to saute to warm up and start sauteing the pork loins with canola oil to seer it on all sides. When lightly brown, take pork out of the pressure cooker. Start sauteing the onions and garlic. If you need to, add a little of the stock. Put all the rest of the ingredients in, including the pork loins just browned into the pressure cooker pot. Press the Soups/Stews button for 30 minutes. Make sure the pressure button is on. After it cooks, then press the release button on the cooker. Wait for all the steam to come out. The cooker will keep the stew warm if you’re not available to release the pressure when it’s done.
