For all you football fans like me, I know it’s getting a little sad to see the football season come to an end, but it can still be a good time to celebrate the Superbowl that’s coming up.
A Superbowl celebration doesn’t have to be stressful in the kitchen. You can start out with the basics like chips and salsa. But who doesn’t like a good spinach dip with chips or crackers.
I found this great and easy recipe for a low-calorie dip in Today.com submitted by Casey Barber. The preparation time is only about 10 minutes.
Low-Calorie Spinach Dip
1/2 cup nonfat Greek yogurt
1/3 cup Neufchatel or other reduced-fat cream cheese, softened
1/4 cup finely grated Parmesean Cheese
1/4 teaspoon salt
1/4 teaspoon garlic powder
1 – 10 ounce package frozen chopped spinach, thawed and drained
1 – 14 ounce can water-packed artichokes hearts, drained and chopped up
1 cup shredded part-skim mozzarella cheese
Preheat oven to 375 degrees F.
Whisk the yogurt and cream cheese together until no cream cheese lumps remain. Stir in the Parmesean, salt and garlic powder with spoon, then stir in the spinach, artichokes and mozzarella.
Spread the dip in an over-safe baking dish. Bake for 20 minutes, until the dip is bubbling at the edges.
Serve with warm crusty bread, tortilla chips, pita chips, or crackers. Enjoy
