Although salmon can be very smelly, it does have a great taste when prepared right. We all know that salmon is very healthy with essential omega oils. And with a side of vegetables and potato or rice side, it makes a delicious meal.
Balsamic Glazed Salmon
1/2 cup balsamic vinegar
1/4 cup chicken broth or stock
1 tbsp dijon mustard
1 tsp minced garlic
1 pinch powdered stevia or splenda
4 (6 oz) boneless salmon filets
salt and pepper to taste
1 tbsp coconut oil
In a small saucepan, whisk together the balsamic vinegar, chick broth/stock, mustard, garlic and sweetener over medium- high heat.
Bring the mixture to a boil. Reduce heat and simmer for about 10 – 15 minutes and then set aside. Heat the coconut oil in a large skillet over medium-high heat.
Season the salmon with salt and pepper then place filets in skillet. Cook for 3-4 minutes until browned. Carefully flip the filets and cook for another 2-3 minutes or until cooked through.
