As mentioned in one of my previous articles, I’d feature a smoothie of the week. They’re quick, easy, nutritious, and can boost energy. In Medical News Today, an article on the health benefits of raspberries by Dr. Megan Ware RDN, she says “A high consumption of plant foods, such as raspberries, appears to decrease the risk of obesity, diabetes, heart disease, and overall mortality. It can also promote a healthy complexion, increased energy, and overall lower weight.” Here’s a delicious way to enjoy raspberries in a smoothie.
Vanilla Raspberry Smoothie
1 cup unsweetened almond milk
1/2 cup full-fat coconut milk
4-5 ice cubes
1/4 cup frozen raspberries
1/2 tsp vanilla extract
powered stevia or splenda to taste
Combine all ingredients in a blender
Pulse several times, then blend for another 30 – 6o seconds or until smooth. Poor into a large glass and enjoy.
