Who doesn’t like to snuggle up with a warm blanket around the fireplace and drink hot chocolate, or whatever you like to warm yourself up when it’s cold outside? With winter still in force for another month or so, I thought I’d share a great hearty breakfast cereal that’ll warm the soul on a cold winters morning.
Now there are alot of hot cereals out there such as oatmeal, cream of wheat, cracked wheat and grits. This has a southern appeal to it since it’s made from grits which is pretty common in the south.
As a diabetic, I use agave sweetener instead of other sweeteners cause it’s lower on the glycemic index.
Laura’s Grits & Fruit
1/2 cup grits
2 tbsp shredded coconut
2 cups water
pinch of salt
1/2 cup frozen blueberries (or whatever frozen fruit)
1/4 cup coconut milk
2 tbsp of agave sweetener
In a 1 quart saucepan, bring water and salt to a boil and slowly pour in the grits, coconut and frozen fruit
Cook until grits are done about 10-15 minutes. Stir in coconut milk and agave sweetener. Makes 2 servings. Can also be served with bacon to complete the breakfast. Enjoy.
