Hyderabadi mutton biryani is very popular and known recipe in hyderabad and all other parts of India. To my knowledge there are two ways to prepare biryani. One is, pre-cooked chicken method and the other is raw meat method. The common in both the methods is 80% cooked rice and make layers and cook in low heat. I used second method as its is more convenient to cook in conventional ovens and the rice gets cooked with great aroma from the cooked meat and you will get nice natural color rice.


  • 2 Pounds/1 Kg Mutton
  • 3 cups/1/2 Kg of Basmati Rice
  • 2 medium size Onions chopped
  • 10 Green chillies
  • 1 cup of curd
  • 1 cup Cooking oil
  • 1/2 cup Ginger and Garlic paste
  • 1 tbs of Red chilli powder
  • Salt to taste or 3 tbs
  • 1/2 cup Mint leaves
  • Half bunch of Corionder leaves
  • 3 tsp of Cumin powder
  • 3 tsp of Cloves
  • 5 Cinnamon sticks
  • 1 tsp Black pepper
  • 6 Elachi/Cardamom pods
  • 6 Biryani leaves
  • 1 tsp of Cumin seeds
  • 2 tsp of Black Jeera/Kala jeera/Shah jeera
  • 3 count Mace/Javitri/Javentry
  • 2 count Star Anise/Dagad Phool

    Method: Preparation of marination of Mutton:
  • Cut length wise green chillies keep aside.
  • Add corionder leaves, mint leaves, ginger and garlic paste, red chilli powder, salt, black pepper, javatri, green chillis, cumin powder, 7 count cloves, 2 cinnamon sticks, 2 elachi pod seeds, black jeera, star anise to the mutton and mix very well and marinade the mix for about 2 hours.
    Making of Mutton Curry
  • Chop onions and keep aside.
  • Heat oil in a curry bowl on medium heat.
  • Then add chopped small pieces of onions and stir now and then untill onions are brown.
  • Then add marinated mutton and mix very well and close with lid, cook untill mutton pieces get soft, stir every now and then
  • In between prepare for rice.
    Preparation of rice:
  • Soak rice for about 20 minutes.
  • Then drain water and keep aside.
  • Take 6 cups of water into a bowl, add 1 tsp of oil, 1 tsp of cumin seeds, 1 tsp of salt (taste the water to make sure you added enough salt), 2 biryani leaves and boil water very well.
  • Once water is fully boiled, remove biryani leaves and then add rice.
  • Now cook rice 80% (do NOT over cook), then drain water from rice and keep aside.
    Preparation of dam biryani:
  • Take foil tray, apply/spray some oil all over the foil tray inner side.
  • Keep some rice and into foil tray then keep mutton curry, repeate this to make multiple layers.
  • Now spread 5 black pepper seeds, 1/4 tbs black jeera, 2 biryani leaves, 4 cloves, 1 cinnamon stick (for good smell) on top of the rice.
  • Close the foil tray with aluminium foil.
  • Now keep this foil tray in oven at 350'F heat, about for 15 minutes.
  • Then take out from the oven.
  • Your mutton dumka biryani is ready to serve.
  • You may serve with raita
